Answer
The best is the one that works best for your requirements.
If your requirement is to have the most PHP extensions then, by all means, compile PHP from source with all extensions.
But that is unlikely to be of any actual importance during development. Just try any of them and see for yourself what you like.
If you feel like something is missing or just doesn’t feel right, then compare how other solutions handle the same operation and if their approach might be more suitable for what you want.
